Sirloin Roast


  • 1Pc Metropolitan Market US Prime Country Club Sirloin Roast

  • *3lb avg size in the store, call ahead to have cut to any size 3lbs-12lbs

  • Olive Oil enough to drizzle over the roast

  • Taste salt and pepper

  • 3 handfuls Carrots, Onions & Celery large rough chop

  • 1 Spring rosemary

  • 1 bay leaf


Caramelized Shallot Sauce


  • 3 Shallots julienne

  • 2TBS Olive Oil

  • ½ cup Red Wine

  • 1 container Red Wine Sauce

  • Taste Salt and Pepper


Preheat oven to 350*F

In a baking dish place the roast, fat side up and season with salt and pepper. Spread the vegetables around the roast and add the herbs.

Place into oven and roast for about 20 minutes per pound for a nice medium rare center, or until your likeness.

In sauce pan add the oil and caramelize the shallots, add the wine and reduce by half. Add the Red Wine Sauce and reduce to desired consistency. Season to taste
