Ingredients
4 Sea bass fillets 6-8 oz
¼ Cup Flour for dusting
2TBS Olive Oil
2TBS Capers
3 Slices of Prosciutto thinly sliced
½ea Lemon and Lime juiced and zested
Taste Salt and Pepper
½ Cup White Wine
2Tbs Plugra Butter
Preparation:
Preheat the oven to 400*F
Place the fillets on a large plate and dust each side lightly with flour and season with salt and pepper. Place a large skillet with olive oil over medium high heat. Add the Sea bass and cook until golden brown on 1 side about 3 minutes. At the same time add the prosciutto stir and cook to brown. Then flip the fillets and put the skillet in the oven and roast for about 10-14 minutes or until done to your likeness. Remove from oven and plate the fillets, Place the prosciutto on paper towels to drain. Place the skillet back on the stove top on medium (Remember the handle is still hot drape a pot holder over the handle) heat add the white wine, lemon and lime juice, capers and butter. Let cook for about 1-2 minutes, season with salt and pepper then pour the sauce over the Sea bass and garnish with prosciutto, lemon and lime zest.
