Ingredients:
4pc 8oz Blue Marlin steaks
Marinade:
Juice and zest from a ½ lime and a ½ lemon
2 Tbs Capers
Sprig Thyme chopped
Sprig Dill chopped
Small bunch Parsley chopped
1 oz Extra Virgin Olive
Salt and Pepper
Sauce:
Juice and zest from a ½ lime and a ½ lemon
6oz Crème fraiche
8 Gherkins chopped
2 Tbs Capers
1 clove Garlic chopped
Sprig Dill chopped
Sprig Tarragon chopped
Sprig Parsley chopped
taste Salt and Pepper
Directions:
Marinate Blue Marlin for at least 45mins
Clean and oil grill grates
Grill on preheated gas or charcoal for approx 4-6 mins per side or until reached desired doneness
Place grilled Blue Marlin on a platter and pour sauce over the fish and serve
