Grilled Blue Marlin with Herbed Crème Fraiche


  • 4pc 8oz Blue Marlin steaks


  • Juice and zest from a ½ lime and a ½ lemon

  • 2 Tbs Capers

  • Sprig Thyme chopped

  • Sprig Dill chopped

  • Small bunch Parsley chopped

  • 1 oz Extra Virgin Olive

  • Salt and Pepper


  • Juice and zest from a ½ lime and a ½ lemon

  • 6oz Crème fraiche

  • 8 Gherkins chopped

  • 2 Tbs Capers

  • 1 clove Garlic chopped

  • Sprig Dill chopped

  • Sprig Tarragon chopped

  • Sprig Parsley chopped

  • taste Salt and Pepper



Marinate Blue Marlin for at least 45mins

Clean and oil grill grates

Grill on preheated gas or charcoal for approx 4-6 mins per side or until reached desired doneness

Place grilled Blue Marlin on a platter and pour sauce over the fish and serve
