  • 1lb Fluke

  • 2Tbl Butter

  • 1Tbl Olive Oil

  • 1Tbl Butter

  • 1Tbl Capers

  • 3-4oz White Wine

  • Taste Salt and Pepper

  • Lemon

  • 8-10 Grape Medley Tomatoes, sliced in halves

  • Enough flour for dredging



Place the flour on a plate and season with a little salt and pepper.

Season the Fluke Fillets with salt and pepper

Dredge the Fluke Fillets through the flour on both sides and set aside

In a preheated skillet add the oil and butter.

Place the Fluke Fillets in the pan and cook for about 3-4 minutes per side or until done.

Remove the fillets from the skillet and place on plates

Return the pan to the stove over medium heat.

Add the white wine, capers, tomatoes, lemon, and butter to the skillet and cook for about 2-3 minutes or until reduced slightly.

Pour the sauce over the fish and serve with the lemon
