Bay Scallops with Citrus Cream Sauce


  • 1 ½ pounds Bay Scallops

  • Taste salt and pepper

  • 1-2oz Oil

  • 2oz Vodka (optional)

  • 2oz White wine

  • 8oz Heavy Cream

  • 2 Lemons juiced & 1 zested


Season the scallops with salt and pepper, Preheat skillet and the oil, pan sear the scallops over high sear for about 2 minutes per side. Transfer scallops to a plate. Carefully add vodka and white wine to the sauté skillet and reduce by half, add the cream and lemon juice reduce by half. Garnish with lemon zest.
