Bay Scallops with Caper Orange Glaze


  • 3/4lbs Dry Pack Bay Scallops

  • Taste Salt and Pepper

  • 2TBS Olive Oil

  • 1TBS Butter

  • 3-4oz Orange Juice

  • Taste Capers


Preheat skillet add olive oil, season scallops with salt and pepper. Saute the scallops over medium high heat for about 2 minutes per side or until golden brown on both sides.

Add butter during last two minutes of cooking.

Remove the scallops, place orange juice in pan and let quickly reduce add the capers and pour over the scallops.
