Ingredients:
¾ cup flour
¼ tsp sea salt
½ tsp white pepper (may substitute black)
2 Arctic Char fillets
1 TBSP olive oil 2 TBSP butter
8 oz sliced toasted almonds
4 sprigs fresh parsley finely chopped
1 lemon cut in wedges
Directions:
Heat a large skillet over medium heat. Place flour on a plate and season with the salt and pepper. Dredge the Arctic Char fillets in the seasoned flour. Set aside.
To the skillet add 1 Tablespoon olive oil and 1 Tablespoon butter. When butter begins to foam, add the Char and gently sauté fillets for 3 minutes on the flesh side or until lightly browned. Carefully turn and continue to cook approx. 3-5 minutes or until internal temperature is 135*F. Remove and plate fish and allow to rest while creating the sauce.
Reduce heat to low. Add second Tablespoon of butter to the skillet. When the butter melts, add almonds chopped parsley, and juice from the lemons. Once all ingredients are combined pour the melted butter mix over the fish.
