Lemon Sole with Crab Meat Stuffing


  • 6 Lemon Sole Fillets

  • Taste Salt and pepper

  • 8oz Jumbo Lump Crab Meat

  • 2TBS Mayonnaise

  • ¼cup Diced Red and Yellow Pepper

  • 1 ½Tbl Chopped herbs parsley, dill (reserve some for garnish)

  • ½ Lemon juiced and zested (for garnish)


Preheat oven to 450*F

Mix crab, mayonnaise, pepper, lemon and herbs and lightly season.

Lay sole fillets with darker side up and lightly season.

Divide the stuffing among fillets mounding on the thicker half of each fillet.

Fold the thinner half of the fillet over the stuffing, tucking the end under to form a packet.

Arrange on a non-stick baking dish and cover with foil

Bake for about 20 minutes or until done
