5 LBS Brandt fresh lean ground beef
2 Large onions, diced
3-5 Large green peppers, diced
2 T Garlic, minced
2 – # 10 cans California Red Kitchen Cut Tomatoes in Light Puree
1 – 4.4 LB bag Family Tradition 7 Bean Cuisine
2-3 T Cumin
¼ C Dark chili powder
¼ C Paprika
1-2 T Cayenne
2 T Salt
¼ C Jalapeno pepper, minced
2-3 C Haserot Beef Broth
Heat 2T cooking oil in heavy skillet or saucepan over medium heat.
Add garlic, onions, green and jalapeno peppers and cook quickly until soft – do not burn – stir often.
Add ground beef and cook for 3-5 minutes over medium high heat.
Drain off excess moisture and grease.
Add herbs and spices, stir in well, continue to cook for 2-3 minutes.
Add enough broth to cover meat – lower heat to medium – reduce liquid by 50% – stir occasionally.
Add kitchen cut tomatoes and cook for 15-20 minutes.
Add 7 Bean Cuisine – stir in well – reduce heat and simmer for additional 10 minutes.
Adjust thickness with remaining broth.
Adjust seasonings with salt and milled pepper.
YIELD: 45-50 servings
