Roast Pork Tenderloin “Santiago”

 

Ingredients:

6 lbs.  Pork tenderloin, trimmed 

1 each  Onion, sliced into thin rings 

2 each  Bay leaves 

2 tsp  Salt 

½ C  Lime or lemon juice 

¾ C  Soy Sauce 

¾ C  Granulated sugar 

1 tsp  Ginger, fresh, grated 

2 cloves  Garlic, minced 

 

Directions:

Place pork in roasting pan and scatter onion rings over it

Combine remaining ingredients and stir until sugar dissolves.

Pour this over the pork and cover with plastic wrap.

Refrigerate for 12 hours or so, turning every once in a while.

Preheat oven to 325*F.

Place meat in oven and roast, basting frequently until an internal temperature of 135*F (for medium rare to medium doneness)

Remove from oven, allow to rest 5-10 minutes before carving.

Yield: Serves 8
