Sirloin a la Toscana
Ingredients:
20 7 ounce Top Sirloin steaks, Diamond B trim,
thick cut

C Bocelli Extra Virgin Roman Olive
Oil

C Dry Italian wine (red)
2 Shallots, chopped fine

T Natural Pak Oregano

T Natural Pak Sage
2
T Natural Pak Rosemary
2 Large yellow onion, sliced
¼
C Fresh garlic, chopped
2
T Milled black pepper
5 Bay leaves
Directions:
Combine
all ingredients except steaks in metal bowl - blend well.
Cover
and store in cooler for 2-4 hours.
Place
steaks in marinade for 6 hours turning after 3 hours.
Remove
steak from marinade, pat dry and grill to desired degree of doneness.
Slice
on bias and fan on plate for service.
