Fried Oyster Po’ Boy with BBQ Sauce

 

Ingredients:

¾ C  Bocelli Arbequina Extra Virgin Olive Oil 

¼ C  Sherry Vinegar 

2 T  Shallots, chopped 

1 tsp  Natural Pak Garlic, chopped 

TT  Salt & Pepper 

¾ C  Bleu Cheese Crumbles 

4 C  Asian Salad Blend 

½ C  Red Onion, thinly sliced 

1 C  Baker Boy A/P Flour 

1 C  Cornmeal 

TT  Natural Pak Cajun Seasoning 

32 each  North Shore Extra Select Oysters 

1 C  Natural Pak Smoky BBQ Sauce 

8 each  Le Pan Europa Sandwich Baguettes 

 

Directions:

In a small mixing bowl whisk the oil & vinegar together, add the shallots and garlic, season salt & pepper

Fold in Bleu cheese crumbles and whisk well.

Mix the Asian Salad and the onions, add the dressing, cover and chill

Combine the flour, cornmeal & Cajun seasoning

Season the oysters with salt, pepper and Cajun spice then dredge in flour mix

Cook oysters in batches over medium high heat in a sauté pan in oil

Remove to paper towels to drain.

Spread the BBQ Sauce on both sides of baked baguettes and place 3-4 oysters on the bottom of each

Spoon some of the slaw mix over the oysters, top with other side of the baguette

Serve with crisp French Fried potatoes

Yield: 8 Sandwiches
