Baked Halibut with Salsa

 

Ingredients:

4 pieces  Fresh Halibut Steaks or Fillets, 1” thick 

¼ cup  Olive Oil 

2 T  Lemon Juice 

1 T  Fresh Garlic, finely chopped 

¼ cup   White Wine 

¼ cup   Water 

1 ½ cup  Fresh Tomatoes, peeled, seeded, coarsely chopped 

½ cup  Fresh Cucumber, peeled, seeded , coarsely chopped 

¼ cup   Fresh Green Onion, finely chopped 

1 each  Jalapeno Pepper, seeded, finely chopped 

2 T  Fresh Cilantro, finely chopped 

1 T  White Wine Vinegar 

1 tsp  Lemon Juice 

½ tsp  Salt 

 

Directions:

Combine oil, lemon and garlic, brush fish with mixture, let stand for 15 minutes.

FOR SALSA: Combine the remaining ingredients, set aside refrigerated until ready to serve.

Place fish on buttered oven proof baking dish, add water and wine.

Place fish into preheated 350*F oven for approximately 10-12 minutes.

Remove fish to a service plate and top with fresh salsa.

NOTE: Halibut may be grilled. To do so, simply eliminate steps 3 & 4. Grill over medium hot coals for

approximately 6 minutes per side turning once and basting with the remaining lemon mix.
