Barbecued Oysters on Shiitakes

 

Ingredients:

12 each  Giant Pacific “BBQ” Oysters, shucked 

2 T  Hoisin Sauce 

1 T  Soy Sauce 

1 T  Ketchup 

1 tsp  Tabasco Chipotle Sauce 

12  Medium to Large Shiitake mushrooms 

 

Directions:

Heat a chargrill or broiler and preheat for oysters and mushrooms.

Combine Hoisin, Ketchup, Tabasco, and Soy in a mixing bowl - allow to sit for 30 minutes.

Cut stems completely off shiitake mushrooms.

Paint mushrooms with a little of the sauce and quickly grill on preheated chargrill or broiler.

Remove to service plate.

Roll the oysters in the remaining sauce and coat evenly.

Grill oysters for 2-3 minutes per side or until desired doneness is achieved.

Place an oyster on each mushroom.

Serve immediately.

YIELD: 3 to 6 oysters per serving.
