ARTICHOKE STUFFING (for chicken)

 

Ingredients:

11/2 C    Diced stale bread

1-2 each  Artichoke bottoms, rough chop

1-2 each  Hard boiled egg, fine dice

½ each    Lemon, zest

1T    Lemon juice, fresh

2T    Olive oil (approx.) to moisten bread mix

2T     Juice from canned artichokes

SALT & PEPPER TO TASTE

 

Directions:

Combine first 4 ingredients in s.s. bowl - moisten with liquids - use to stuff chicken breast
