Pork Tenderloin w/Shiitake Brandy Cream Sauce



Ingredients

  • 1pkg Metropolitan Market Premium Pork Tenderloin

  • 1-1/2 tsp Each Fresh Chopped Herbs: Parsley, Rosemary, Thyme, Basil

  • 1oz Olive oil

  • Taste Salt and Pepper


Directions


Season the Pork with the salt and pepper then rub with the olive oil and herb mixture.


Pan sear the tenderloin in a preheated skillet.


Keep the temperature on the higher side as the pork will sear golden brown on all sides, in about 5 to 8 minutes.


Place the skillet with the tenderloin in a pre heated 375*F oven and roast for about 12-15 minutes or until done.


Medium to medium well is a great doneness for pork about 135*F internal temperature.


Remove the tenderloin from the pan let the pork rest for a few minutes prior to slicing.


Sauce:

Add the shiitake mushrooms to the skillet and sauté until soft

Add the shallots and sauté for a minute

Add the garlic

Carefully add the brandy and light with a long stemmed match.

Add the Glace de veau and let reduce for a few minutes, add the cream at the end for additional richness and a little extra thickener to the sauce.

Serve the pork tenderloin sliced on the plate and top with the sauce and a little reserved herb mixture.
