1pkg Windy City Hot Dogs
1pkg North Country Cob Smoked Bacon
1pkg Metro Brioche Hot Dog Buns
1Tbl Olive Oil
1 Shallot - julienned
1 Red Pepper - julienned
Taste Salt and Pepper
Wrap one piece of bacon around each hot dog and secure with toothpick, refrigerate until ready to cook.
Preheat saute skillet over medium heat,
Add olive oil and shallots. Cook for about 5 minutes.
Add the peppers and cook for 5 to 8 minutes or until shallots and red peppers become soft and caramelized.
Preheat grill over medium to medium low heat.
Place dogs on the grill and cook turning the dogs slowly and often, so the hot dogs are heated through by the time the bacon crisps. About 10 minutes
Serve hot dogs topped with peppers & shallots and your favorite condiments.
