Flank Steak Fajitas
1 USDA Choice Flank Steak 2-3 lbs
4 cloves Garlic – Crushed
½ Onion – Large Dice
1 tsp Sea Salt
1 tsp Black Pepper
2 tsp Cumin
1 tsp Chipotle Chile Powder
1 tsp New Mexico Red Chile Powder
1 tsp Mustard Powder
½ tsp Coriander
2 Tbl Worcestershire Sauce
1 Tbl Liquid Smoke (Mesquite or Hickory preferred)
1 c Beer (Dos Equis Lager works great, but your favorite lager will work too! Do not go darker than a lager)
3 c Water
Flour or corn tortillas
Your favorite shredded cheese
Score the surface of the meat with a knife.
Combine the marinade ingredients
Place the flank steak and pour the marinade in the container or zipper sealed bag.
Marinate in the refrigerator for about 2 hours.
Preheat grill to medium high
Take the steak out of the marinade and place it on the grill
Cook for approximately 5-6 minutes per side (turning twice per side for grill marks) until cooked to your preference.
Let rest for 5 minutes.
Make very thin slices against the grain and at a diagonal to increase the width of the slices.
Serve over tortillas with your choice of toppings
