Airline Chicken Margarita

w/Summer Salsa


4 pcs    Airline Chicken

½ Btl   Margarita Mix

3oz      Tequila (Optional)


3          Tomatoes – diced

½         Red Pepper – diced

¼         Small Onion – chopped

2Tbl     Fresh Parsley – chopped

1Tbl     Fresh Cilantro – chopped

2          Ears of Corn Blanched & kernels removed from the cob

2          Scallions – chopped

2tsp     Chili Powder

Juice from ½ lime

Salt & Pepper to Taste


Place airline chicken in a marinating bag and pour the margarita mix over the chicken.  Add the tequila.

Let the chicken marinate for 20 minutes and up to 4 hours.

Prepare salsa by combining all salsa ingredients.


This may be made up to 8 hours earlier.

Preheat the grill.

Grill the chicken over direct heat to sear both sides (approximately 3 min per side).  Remove from direct heat and continue to cook with the lid closed approximately 15-20 minutes or until internal temperature is 165*F.

Once cooked, allow to rest for 5-7 minutes before serving.

Serve with a generous portion of the salsa.
